    M05 Mead Yeast -  A high ester-producing strain conferring fresh, floral esters, especially when fermented cool. This yeast has high alcohol tolerance and ferments well over a wide temperature range. Suitable for all styles of mead.


    1. Must Preparation

    • To prepare a 23-liter batch of mead, you will generally use between 6 and 9 kg of honey. The exact amount of honey you should use depends on whether you want a sweet, semi-sweet, or dry mead:

      • Sweet mead: 8-9 kg of honey
      • Semi-sweet mead: 7-8 kg of honey
      • Dry mead: 6-7 kg of honey
    • Dissolve the honey in water, stirring well to ensure a homogeneous mixture.

    2. Yeast Rehydration

    • Rehydrate 10g of yeast by adding it to room temperature water (between 15-30°C) and allow it to stand for 15-30 minutes before adding it to the must.

    3. Adding Yeast to the Must

    • Add the rehydrated yeast to the must, stirring gently to evenly distribute it.

    4. Fermentation

    • Ferment at a temperature between 15 and 30°C. For better results and higher ester production, it is recommended to ferment at the lower end of this range.
    • Monitor the fermentation to ensure the process is proceeding correctly and that the attenuation level is between 95-100%.

    5. Clarification

    • After fermentation is complete, allow the mead to stand for several weeks to clarify. Given the high flocculation rate (4 out of 5), the mead should clarify relatively quickly.

    6. Bottling

    • After clarification, transfer the mead to bottles, avoiding disturbance of the sediment at the bottom of the vessel.

    7. Maturation

    • Allow the mead to mature for at least several months to allow for the development of a full aromatic bouquet characterized by fresh, floral notes.


    • Experiment with different amounts of honey to find the perfect balance between sweetness and alcohol content.
    • Stick to a maximum alcohol content of 18% ABV to avoid fermentation issues.
    • For higher alcohol levels, it is recommended to ferment below 25°C.
