House wine is not always clear, so clarification may be needed. Unfortunately, we can never be sure if we are dealing with turbidity caused by positively charged molecules (e.g. proteins) or negatively (e.g. polyphenols) or other compounds of organic origin.
Before applying a specific clarifying agent, it is worth making samples on a small sample of the wine (approx. 1 L). They allowed us to choose the right clarifying agent. The clarification process usually takes about a week. You should also remember not to overdose the clarifying agents. In too high a dose, secondary turbidity may occur or we will change the color of our wine.
Directions for use:
After fermentation and pouring off the yeast sediment, the wine is gently mixed to remove any remaining gas. Add 7 ml of silica sol to 10 L of wine to the wine and mix thoroughly. Then add the gelatin previously dissolved in 50 ml of warm water. Gelatin dose: 1.4 g (half a teaspoon) per 10 L of wine. Mix everything up. Leave the clarified wine at 15-20 ° C for 24 hours. After full clarification, pour the wine off the sediment.
NOTE: Sol is always added to wine before gelatin.
